4 small sweet potatoes
coconut oil spray
salt & pepper, to taste
Preheat oven to 450 degrees. Line two cookie sheets with parchment paper and set aside. While oven is heating, wash, scrub and dry potatoes thoroughly.
Julienne potatoes. The thinner the cut, the quicker they will cook. 1/4 to 1/2 inch wide pieces work best. Spread the potatoes evenly across both cookie sheets, making sure they do not touch. Spray generously with coconut oil. Sprinkle with salt and pepper to your liking.
Bake for 10-12 minutes, remove from oven. Turn potatoes, spray once more with coconut oil. Place pans back in oven, making sure you rotate them. Bake for another 8-10 minutes.
