The quick snack/ dessert that tastes like apple pie and ice cream. Cinnamon is a great addition to the diet for anyone who has PCOS. It adds in boosting metabolism. Although this dish is higher in carbs, most are simple carbs and the protein in the yogurt will help to slow the digestion process.
- 1 tsp extra virgin coconut oil
- 1 fuji apple (or any type of baking apples), sliced thin
- 1 tsp cinnamon
- 1 cup vanilla greek yogurt
Over medium heat, melt EV Coconut Oil in a pan. Once oil is melted, add apple slices. Cook for 1 minute, turn over. Sprinkle with cinnamon. Stir well. Cook 2 minutes. Remove from stove.
Place apples in a dish, top with vanilla yogurt. If you prefer an added crunch, top with a few almonds.
