2 cups Spring Mix
2 slices sweet onion
1/4 sweet red pepper
1/2 small sweet potato
90% lean beef burger
1/8 tsp garlic powder
1/8 tsp onion powder
1 Tbs mild pineapple salsa
- Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
- Wash and cut sweet potato into small paper thin slices with skin on. Place each slice on the parchment paper in a single layer. Separate the onion slices and add them to the cookie sheet. Sprinkle salt and pepper to taste. Place in oven and cook for 15-20 minutes.
- Sprinkle onion and garlic powder on the raw burger. Grill to desired temperature on the bbq/
- Line your plate with the spring mix. Add the burger. Top with sweet potatoes, onion and pineapple salsa.
